Vineyard & Winemaking Notes

The grapes are hand-picked from the coolest growing area at the foothills of the Pyrennes. The vineyard is tempered by sea breezes from both the Mediterranean and the Atlantic. Good canopy management brings grapes to ripeness amid the cool temperatures, producing quality low yields of delicate Pinot Noir grapes. The grapes are then cold soaked for 10 days. The long fermentation (10-14 days malo-lactic) and manual cap "punch down" yield maximum color and tannin extraction in the Burgundian fashion. The wine remains sur lees 3 months before racking and aging. Oak aged for 6 months.
